Saltibarsciai - Cold Beet Soup

   (Yields 7 Pints of Soup)

2 16 oz. cans of pickled whole beats, drained , shredded

1 large cucumber, peeled, diced

1 large refrigerated Clausen pickle, ends trimmed, diced

½ to ¾ cup of Clausens pickle juice, strained

½ to 1 bunch of green onions, sliced thin (green part only)

½ gallon of buttermilk

fresh dill, chopped fine (approximately 1 tablespoon)

salt / pepper to taste (approximately 1 teaspoon each)


   (Chill over night to let the flavors mix)

   (diced Hard boiled eggs optional )
